Mallorca Weizen, also known as Es Blat i S'Ordi, is our craft wheat beer: brewed in Alaró, Mallorca, with Serra de Tramuntana water, wheat, Pilsner, Cara Malze, Hersbrücker hops, 5% ABV and only 12 IBU.
Mallorca Weizen clearly looks towards Germany: wheat, a soft body, low bitterness and that typical combination of light banana and clove that makes the style instantly recognisable.
But we do not want a heavy or sweet wheat beer. We want a very drinkable Weizen: refreshing, gently fruity without the fruit taking over, made for the terrace, the taproom, simple food and hot days in Mallorca.
The base combines wheat, Pilsner and Cara Malze. Hersbrücker keeps the bitterness low, clean and noble, leaving the wheat and yeast profile in charge.
And like all our beers, it is born in Alaró with water from the Serra de Tramuntana. That is not romantic label decoration: water also builds body, freshness and drinkability.
A good Weizen does not need to shout. It has to be aromatic without feeling heavy, fruity without becoming juice and refreshing without losing character.
Mallorca Weizen plays with that balance: soft banana notes, a light touch of clove, silky body and a clean finish. It is easy to drink, but not flat.

The best way to understand Mallorca Weizen is to drink it fresh, close to where it is brewed: at our taproom in Alaró, directly inside the brewery.

Both. Mallorca Weizen belongs to the wheat beer family, but technically it is also part of the Ales because it uses top fermentation.
That separates it from styles such as Pilsner, Helles or Lager, which use bottom fermentation.
The main difference is fermentation. A Weizen like Mallorca Weizen ferments with top-fermenting yeast, usually at warmer temperatures.
That yeast produces characteristic aromas such as ripe banana, clove and soft fruit. A Lager, by contrast, usually has a cleaner, drier and more neutral profile.
The banana and clove aromas do not come from added fruit or spices. They are natural compounds created by yeast during fermentation.
In Mallorca Weizen we look for soft banana notes and a light touch of clove: present and recognisable, but never dominating the beer.
A German Weizen is usually built on wheat, top-fermenting yeast and natural banana and clove aromas. A Belgian Witbier also uses wheat, but often plays with spices such as coriander or orange peel.
Mallorca Weizen looks more towards the German school: yeast, wheat, freshness and no disguise.
Many traditional Weizen beers keep part of the yeast and wheat proteins in suspension. That creates natural haze and a more silky texture.
That slightly opaque look is not a defect: it is part of the classic identity of the style.
Es Blat i S'Ordi means wheat and barley. The name fits a wheat beer made in Mallorca: a recipe that looks towards German Weizen tradition, but speaks from the island, from Alaró and from FORASTERA.
